Method: All Grain

3/20/10 - Extremely tiring brew day, mashed in right at 154 but lost four degrees over the first 30 minutes so I added boiling water to bring it back up to 154. 

I collected a gallon of the first runnings and boiled it down until it was very dark and syrupy ( I estimated it got down to about 2 cups in volume) and added it back to the main boil.

I grossly overestimated my boil off rate, in addition to collecting way too much pre-boil volume and ended up with about 8 gallons @ 1.065 instead of my targeted 6 @ 1.085, even after a 3 hour boil!

Pitched a 2L shaken starter made with yeast I had washed and froze in January.  The starter took a long time to take off, but I saw activity in the main batch within 12 hours @ 60 degrees. 

3/31/10 - Raised the temp up to 70+ and swirled daily to rouse the yeast as I was seemingly stuck at 1.028.  To speed things up I added one crushed beano tablet. 

4/7/10 - Managed to get about 10 more pts out of the fermentation, tasted great so I figured it was time to get it off the yeast.  Transferred 5 gallons to the secondary to lager at 30 degrees, and the rest to a keg.

White Labs WLP 028 — Liquid — 2L shaken starter
Procedure

Mash at 154 for 90 mins.

Collect 8.5 gallons, boil for 2 hours.

Take 1 gallon of first runnings and reduce down to 1/2 pint and add back to the boil.

Ferment around 62 degrees.

May substitute Northern Brewer hops for both additions.

Secondary: 10 days @ 72° F

Flavor: 19 out of 20 This Beer had a Woodsy/ Smokey after taste. Something that would be paired well with Smores around the campfire.
Mouthfeel: 5 out of 5
Overall Impression: 9 out of 10 Great beer. If you market it this beer, you should look towards the camping crowd.
