Flanders Red Ale 2012
Specifics
General Information
Method: All Grain

9.5 pre-boil volume - 90 min boil

Made a bunch of canned starters with the extra wort.

4/29/12 - Added 2oz of Med. Toast French Oak cubes that have been soaking in Everclear for three weeks and made oak essence at the same time.

2/11/13 - Tasted at one year mark and it was not nearly sour enough.  I brewed another Flanders batch and pitched it on top of the bacteria cake hoping to make a overly sour batch for blending with this one.  Racked to secondary.

08/16/13 - Sampled at the 18 month mark. Not much improvement in tartness despite the formation of another pellicle.  I blended in 1/3 of the 2012 batch and 1/3 of the Cherry Oud Bruin and liked the results.  I'm thinking about blending this with the Oud Bruin for some bottles.
