Mash at 113 for 10

Raise to 145 for 40

Raise to 155 for 10

Mash out at 168

 

75 min boil

Chill to 75 and transfer to 10 separate gallon jugs. 

One jug will receive a Belgian Saison yeast

The remaining jugs will each receive a pitch of Brett for primary fermentation.
