Mash at 147 for 75 mins

Add alpha amalyze enzyme to secondary to further dry out the beer

 

1-23-1 - After racking these beers over to a keg and pressurizing them overnight I woke up to the strong smell of spilled beer.  One of the disconnects had cracked and the entire keg dispensed out on the floor (and a lot in the freezer underneath). 

 

Comments

Fermented with Kolsch yeast at 65 which turned out to be way too fruity for this beer.  I did re-pitch the yeast into an IPA which I fermented under 60.
